This is just stupid, what if you went to a restaurant to eat and someone told you "Happy Eid ul-Fitr!" You would be confused, and maybe slightly insulted. (I'm going to guess you would be because you seem like one of those self righteous 'I'M AN AMERICAN DAMMIT!' kind of guys)
The use of "merry christmas" is singling out a group of people, a group that not everyone is a part of. In places like Olive Garden, where we do believe in a "family experience" the last thing we want to do is offend a guest.
As a man who was raised loving christmas and anything to do with it, I wasn't raise to be ignorant, and when working in a place like Olive Garden where you meet more than a variety of different people the last thing you can be is ignorant and offensive.

So before you get mad and upset over you not being able to say "merry christmas" think how you would feel if you were out eating your family and an employee assumed you believed in something that you don't/celebrated something that you don't.
